Birria Tacos

Ingredients

  • chuck roast
  • shredded Colby jack cheese
  • tortillas
  • beef broth
  • au jus gravy mix packet
  • carne asada mix packet
  • pepperoncini peppers

Instructions

  • place chuck roast, broth, carne asada mix, 1/2 au jus gravy mix packet and the jar of pepperoncini peppers in a crock pot and cook on low for 6-8 hours
  • once fully cooked, shred the roast
  • dip a small amount of the broth out and heat in a skillet on medium heat. (I use just enough to coat the bottom of the skillet)
  • dip the tortilla into the broth and place into the heated skillet
  • fill the tortilla with the shredded meat and sprinkle the Colby jack cheese on the meat.
  • fold the tortilla and cook on both sides until crispy
  • I normally serve with rice
